A billionaire's son has snapped up the iconic Australian watermelon cake empire and plans to take it international. 

Rumoured to be the most Instagrammed dessert in the world - Black Star Pastry's strawberry watermelon cake has just been claimed by hotel mogul Louis Li.

The aesthetically pleasing strawberry watermelon cake, topped off with pistachios and dried rose petals, was first tasted by Mr Li three years ago and he became obsessed - watching its popularity rise on Chinese social media app WeChat.

With two layers of almond dacquoise, rose-scented cream, watermelon and strawberries - the cake has become the signature slice for the quaint cafe in Sydney's inner west.

Mr Li, as the new majority shareholder and CEO of Black Star Pastry, plans to take the brand to New York, Los Angeles as well as Asia. 

'This cake is a phenomenon, not just a fad,' the 30-year-old told the Sydney Morning Herald.
