An explosion tore through a building in Sydney's north, leaving one man in hospital.

Emergency services were called to the Neutral Bay property at 5.15am today after a fire sparked an explosion in a coffee shop in an apartment block.

An off-duty fireman told 9 News that a man in his 30s ran out of the building engulfed in flames.

The man was taken to Royal North Shore Hospital with serious burns on his legs, as well as midsection, arms, hands and face.

Around 30 residents were evacuated, with some needing assistance climbing from windows to safety.

The explosion was so strong that it caused the entire building to shake, shattering windows.

Some residents were treated by paramedics for smoke inhalation.

Police have blocked off Waters Road, where the fire and explosion happened,
