A young gymnast who tragically watched her boyfriend plunge 30 metres from a cliff reveals the heartfelt letter she wrote to him just months before his death.

Dion Papanakos, 20, had been dating Miranda for a little under a year when they went for a romantic walk around Coogee Beach and Gordon's Bay, in Sydney's east, on Saturday afternoon.

At about 3pm, the young man lost his footing and fell to his death. 

On Monday, a devastated Miranda posted a photo of a double-rainbow that appeared over Coogee moments after he passed away, along with a video of a card she made for their three-month anniversary in July.

'I can't believe I'm falling in love with you,' she wrote.

'I think you're a beautiful person, inside and out.'

She said Mr Papanakos caught her attention from the moment they first spoke, and 'I knew I could see a future with you'.

The large card was printed with a number of photos of them together during their first three months as a couple.

In another Instagram story, Miranda shared a photo of the double rainbow which she said appeared over the picturesque beach after Mr Papanakos fell.

'Rest in peace, my love,' she wrote.
