An elderly man in central California survived on nothing but bread and candy he had in his car for a week after he became stuck in the snow during the recent winter storm

Jerry Jouret, 81, was recently rescued by California Highway Patrol officers in Big Pine, California a week after he attempted to make the trek back to his home in Nevada

In addition to surviving on croissants, candy, and a biscotti, the elderly man said he occasionally rolled down his window to eat snow when necessary.

Jouret set out on his way on February 24 - hoping to beat the impending storm - but quickly became stuck in a snowdrift on a desolate highway in the area.

The rescue comes as the state prepares for a 'Pineapple Express' -an atmospheric river storm that originates near Hawaii - that will bring even more heavy rain and flooding.

After the man's family reported him missing, a California Highway Patrol helicopter spotted the man's vehicle and rescued him in what officials called 'a miracle.'

Jouret, a mathematician and former NASA employee, was improperly prepared for the storm, according to local outlets.

He had set out from his mountain home in California in hopes to make it back to his family home in  Gardnerville, Nevada before the historic snowstorm hit.

What should have been a three hour drive in good conditions, became a six night, seven day experience.

His grandson, Christian Jouret, told CNN the 81-year-old accidentally veered onto a smaller road and became stuck in the drift.

Throughout the week, the man relied on his light windbreaker, a quilt, and a bath towel to stay warm.

His grandson said he occasionally would turn on his vehicle to warm it up overnight as the temperatures dropped well into the teens.

After his family had reported him missing and snow conditions had eased up, California Highway Patrol officials were able to send out a helicopter to search.

On March 2, while surveying the area, Jouret's car was 'miraculously' spotted in the middle of a snowdrift as officers spotted him waving his arm out of the car's window.

The elderly man was rushed to the hospital but doctors said he showed no signs of hypothermia and he was eventually released hours later.

While speaking with CNN, Jouret said he is
