A young vegan has criticised the 'hopeless' and 'not nutritionally fulfilling' hospital food during her week-long stay.

Rebecca Walker, 23, was airlifted to Rotorua Hospital earlier this month after she fractured her ankle while hiking around the Te Araroa trail on New Zealand's North Island.

During her stay in hospital, she asked friends to drop off food because most meals were either non-vegan or had no protein.

Meals included Weet-bix and no milk, chickpeas covered in cheese, vegetable stir fry with rice and a sad salad sandwich which had one slice of tomato, a slither of cucumber and a few green leaves on sparsely buttered bread.

One night's dinner was three apples and a juice box.

Many meals offered were non-vegan, including cow's milk, yoghurt, cheese, porridge and jelly, despite Ms Walker's repeated reminders to staff about her dietary requirements.

'I am hungry and frustrated,' Ms Walker told the Rotorua Daily Post.
