An accused serial rapist kept a meticulous ledger of 21 young Korean women he lured with fake job ads before carrying out a series of alleged sexual assaults.

Balesh Dhankhar is on trial facing 39 charges including drugging and raping five women while they were unconscious in January to October 2018, and recording them on hidden cameras.

A jury heard he had a 'very specific modus operandi' to ensnare the women - using the same hotel, café, and Korean restaurant in almost all the rapes. 

Prosecutors alleged he spiked glasses of wine and other drinks with tablets of the sleeping drug Stilnox or infamous date-rape drug rohypnol, either at a restaurant or his flat in the World Square complex in the Sydney CBD.

Dhankhar, 43, admitted on Wednesday that his scheme to meet women to satisfy his Korean fetish was 'immoral' and broke down in the witness box explaining how it worked and how to decode the ledger.

The ledger, filed with the NSW District Court, reveals the scores of other women the court heard he tried the same moves on, but either discarded as not attractive enough or they did not respond to his wiles.

He recorded their personal details along with note from email, phone, and in-person communication, along with plans what what to do next in an 'action' column.

Dhankhar explained to the court that women he managed to have sex with were listed in the action column as 'BASE 4', a term he picked up from Hollywood movies.

He explained that others were listed as 'STOP' if he was going to stop contacting them, and 'HOLD' for those put on the backburner.

The court heard there were a variety of reasons why his pursuit of them could be ended or paused, including his lack of physical attraction after meeting them, or that something in their circumstances made it too difficult.

There were also references to 'pipe', short for pipeline which meant they were progressing towards him having sex with them, and the column 'pipeline comment' noted how that was going.

'Had dinner, super hot, applied for Emirates flight attendant, loves drinking & clubs,' it read. 

The action column had 'BASE 4' but a note in the 'pipeline comment' column read 'got angry on base 4, doesn't want to continue - close'.

Four days later, Dhankhar allegedly raped his third victim twice, despite her telling him that she didn't want to get involved with him because she had a boyfriend.

The ledger entry's meeting notes acknowledged this issue with 'has a Thai BF, ready to breakup for me'.

The note added 'dropped in mid night', after he lured her back to his apartment following their dinner at Koibito, a nearby Korean restaurant also close to the Hilton Hotel.

The court heard this woman woke up and saw a condom wrapper and felt pain, leading her to realise they had sex.

She told the court she called her boyfriend in tears saying she didn't know where she was and had to break up with him because of what happened.

An entry for the fourth woman Dhankhar allegedly raped went into long detail about her English literature degree and background, but that she 'sounded bad, weak eng' on the phone.

After meeting, his notes were more complimentary: 'slim, avg height, pretty 6.5, jolly... almost went to dinner but she had to go for drinks with British girls'.

An update to the meeting notes column after he allegedly raped her twice after their second meeting on October 12 added 'met for dinner Fri, came home'.

However, the pipeline comment read: 'got confused after base 4, take it slow and bring her in'.

Just weeks later, Dhankhar allegedly raped his fifth victim on October 21 - but this one led to him being arrested.

The woman told the court she initially gave Dhankhar the benefit of the doubt and called the alleged rape an 'accident' because he seemed like a good man and she blamed herself for what happened.

'I don't understand why we did that… first time we can call it accident, that's it. I don't want to make second time,' she wrote in a text to him days later.

Her ledger entry is incomplete because he was arrested a day after meeting her, when she went to the police. It only noted her work and education background with 'fix meeting' in the action column.
